Monte Spada organic multi-flower honey is the result of foraging of spontaneous flowers and noble melliferous plants grown on the farm, such as lavender and sainfoin. Sainfoin is a forage leguminous plant which at Monte Spada is often grown together with emmer. Sainfoin contributes to a natural fertilisation of the soil, while its pink flowers colour the landscape in June and September. Sainfoin, together with lavender, gives the honey rich and precious flavours. Further, sowing and growing melliferous plants near the apiary makes it possible to obtain a “zero-mile” honey, that is, without having to transport the beehives by van to places near flowering plants. Extracted from the honeycombs by cold centrifugation, without heating or pasteurizing.
